Easy Stuffed Tacos...stuffed Mexican Pizzas...Well...

you can call them whatever you like. I call them time well spent in the kitchen with Quirky. Time chatting...giggling...and making something delicious. Time spent together. If we get dinner in the process, well that's even better. 


Stuffed Tacos

2 cans of large size can biscuits (16 biscuits)
1/3 cup diced  cooked chicken
1/3 cup of diced yellow, red, and orange bell peppers
1/3 cup of can black beans (drained and rinsed)
Shredded Cheese
Garlic powder
Cayenne pepper
Chipotle Hot sauce

Mix together the chicken, bell peppers, and black beans together. Season to taste using garlic powder and cayenne pepper. ( I used just a dash of the garlic and couple dash of the cayenne) Then again you could just you use taco seasoning if you have it...either way Mix together well. Then add just a drop or two of the hot sauce. Mix together one final time and then set aside.

Next using your hands or a rolling pin flatten biscuits until the are a large thin circle. Put a tablespoon of  the chicken and bell pepper mixture to the side of each circle. Cover with about 2 tablespoons of cheese. Fold the biscuit over until you have a half circle. Seal the edges tight using a fork. Bake at 350°F for 18-20 minutes, flipping halfway through. Serve with salsa and sour cream. 

See...nothing elaborate. No complicated recipes. No gourmet ingredients that cost a fortune and a hard to find. Nope...just me and Quirky in the kitchen having fun. Smashing biscuits with our bare hands like its play dough...and talking...and laughing. Like I said...time well spent.
